Chocolate chip and cranberry cookies

Ingrédients :

  • 1/2 cup of Naimex oils coconut oil (solid)
  • 1/2 cup of brown sugar or coconut sugar
  • 1/4 cup of granulated sugar
  • 1 large egg
  • 2 tsp of vanilla extract
  • 1 1/2 cups of all purpose flour
  • 1 tsp of baking soda
  • 1/4 tsp of salt
  • 1/4 cup of chocolate chips
  • 1/4 cup of dried cranberries

 

Préparation :

  1. In a stand mixer, add the coconut oil and both sugars and mix until combined for at least 2 minutes.
  2. Add the vanilla and the egg to the mixture and mix for another 2 minutes
  3. In another bowl mix the dry ingredients (flour, baking soda and salt).
  4. Slowly add in the dry ingredients to the stand mixer containing the wet ingredients.
  5. When cookie dough is well mix add the chocolate chips and dried cranberry.
  6. Portion out 12 cookies and place them on a plate and chill it overnight (it can also go straight into the oven if thinner cookies are preferred).
  7. Bake for 10-12 minutes in oven preheated at 350o F
  8. Allow cookies to cool for a couple of minutes before transferring them to a wire rack to cool completely.
  9. Store cooled baked cookies in an airtight container at room temperature for 3-5 days or freeze for up to 3-4 months.
