Lemon Drizzle Cake

Ingredients :

For the cake:

  • ½ cup of melted Naimex Oils coconut oil
  • 1 cup of sugar
  • 3 eggs
  • ½ cup of plain greek yogurt
  • 1 tbsp of lemon zest
  • juice of half a lemon
  • 1 ½ cup of all-purpose flour
  • pinch of salt
  • 1/2 tsp of  baking soda

For the icing:

  • ½ cup of icing sugar
  • 2 tsp of lemon juice
  • 1-2 tbsp of milk

Instructions :

  1. Butter (with Naimex oils coconut oil) and flour a loaf pan.
  2. In a stand mixer, add the coconut oil and sugars and mix until combined, then add the eggs, the Greek yogurt, the lemon juice and the zest and mix until fully combined.
  3. In a small bowl, combine dry ingredients (flour, salt, and baking soda).
  4. Gradually add the dry ingredients to the wet mix in the stand mixer and mix until all ingredients are combines.
  5.  Pour the batter into the prepared loaf pan and bake for 45-50 minutes in preheat oven at 350o F
  6. When ready let the cake cool for at least 10 minutes before unmold
  7. For the icing, whisk together the icing sugar, lemon juice and milk in a small bowl. Pour the icing over the cake and let it harden for 2 or 3minutes before cutting the cake.
